How Freeze – Drying Works
Even though people call them “freeze-dried candies”, the process is more like vacuum-puffing. Candy does not actually freeze solid in the same way fruit or vegetables do, because it contains almost no freezable water.
The process involves three main steps:
- The candies are cooled to extremely low temperatures
- The internal moisture freezes into tiny ice crystals
- They are placed inside a vacuum chamber where the ice instantly turns into vapor
This sudden moisture loss causes the candy to puff up and harden. Gummy candies become crunchy, airy and full of intensified flavor. Some describe the texture as similar to a chocolate malted ball.
Not every candy works for freeze – drying. Items like jellybeans or Tic Tacs don’t expand enough because they lack water and air pockets. Chocolate also melts too fast.
